1/4The idea to gather a Moscow gastronomicThe public at the Scandinavian festival in the very center of the city belongs to Andrey Shmakov, brand chef of the SAVVA restaurant. The recently opened SAVVA restaurant is a follower of the best gastronomic traditions and offers samples of the "new Russian cuisine", which combines commitment to national dishes with the principles of Nordic Cuisine, which is gaining popularity in the world. Therefore, it is no coincidence that the traditional Scandinavian festival took place here. The shortest night of the year became one of the brightest for SAVVA. The host of the evening, Sergey Ivanov, spoke about Scandinavian traditions, and Andrey Shmakov presented the dinner menu: "Today I have prepared a set of the simplest dishes, using ingredients that Estonians love. During the preparation, we used traditional Scandinavian technologies: marinade, smoking, drying. Residents of the Scandinavian countries warmly and cheerfully celebrate this day in the company of friends and family. My team and I tried to recreate the festive atmosphere and share it with you, friends.”1 / 4The unique gastronomic handwritingShmakov, which he acquired over the years, was reflected in the dishes of this evening. The set menu has become a worthy representative of the whole variety of Nordic Cuisine: tomatoes, flavored with goat curd with rhubarb, mackerel with horseradish ice cream and smoked salmon with cucumber salad, eel with parsley emulsion, crisp romaine salad and liver with smoked cheese, beer syrup . The guests also enjoyed the main dishes of the evening: beef with a fragrant currant leaf and sprat and duck with gooseberry. Fish delicacies were perfectly combined with white Chardonnay "100 shades of white" in 2012 produced by Phanagoria, and the taste of meat dishes was emphasized by Birnje Krasnostop 2008. From the stronger drinks, the guests were offered Estonian brands of vodka HÕBE and VIRU VALGE, and Vana Tallinn was served with desserts (juniper ice cream and kama-cream with berries). This evening, the national gastronomic traditions were intertwined with national traditions. Midsummer is a very popular holiday in Scandinavian countries. On this day it is customary to meet with friends, have fun during pleasant conversations and delicious food. Girls wear wreaths and guess, and men jump over the fire. In SAVVA there were no fortunetelling and jumping (although the imitation of fire for the atmosphere was still present), but otherwise managed to convey the atmosphere of this Scandinavian fun.
