It is very easy to prepare paskha, you just need to mix all the ingredients. I use powdered sugar instead of sugar to reduce the cooking time. If you use very dry raisins, soak them in hot water for 5 minutes before using, then squeeze out the water well. You can also add nuts, fresh fruit or candied fruit to paskha. I often add fresh vanilla to the paska, but you need to be especially careful with it: if you add too much, the paska will have a bitter taste. Kulich Ingredients: dry yeast - 10 g, milk - 0.5 l, flour - 1 kg, eggs - 6 pcs., butter - 200 g, sugar - 300 g, raisins - 250 g, vanilla - 1 pod. For the glaze: egg whites - 2 pcs., sugar - 100 g. Dissolve the yeast in warm milk, then add 500 g of flour and mix until smooth. Cover the dough with a towel and put in a warm place to rise, for about 30 minutes. Separate the whites from the yolks. Grind the yolks with sugar, and beat the whites into a thick foam. Add the yolks to the dough and mix well. Then add softened butter, mix well again, add egg whites and mix carefully again. Add the rest of the flour to the dough (if necessary, you can add more flour, the dough should not stick to your hands). Put the dough in a warm place for about an hour (it should double in size). Raisins should be soaked in warm water for about 5 minutes, then drain the water and add raisins to the dough. Mix and put to rise again for about 20 minutes. Put the risen dough into greased molds (the mold should be filled approximately 1/2), cover and put in a warm place for about 10 minutes so that it rises a little. Then put the molds in the oven and bake the Easter cakes at 150-170 degrees until done (check the readiness with a wooden stick, it should be dry). For the dough, beat the egg whites with sugar. Grease the hot Easter cakes with icing and decorate to taste.
