To qualify for such a high honour, Neapolitan pizza must now meet a number of standards: it must not exceed 35 cm in diameter, the dough edges must be 23 cm high, and the pizza filling must consist of peeled tomatoes, mozzarella, garlic, olive oil, salt and fresh basil leaves. The pizza can only be baked in a wood-fired oven, from which it must be taken out soft and elastic at the same time. The finished pizza must be easy to bend and must under no circumstances be frozen. The victory of Neapolitan pizza comes 11 years after mozzarella cheese received similar recognition.
