But it would be foolish to offer equally fresh raspberries, blueberries and bilberries every time your partner invites you to drink a glass of white wine in a romantic setting! Fresh berries can get boring as quickly as chicken and potatoes. Fortunately, the French, great connoisseurs of romance, know the perfect recipe for a dessert with berries for lovers - clafoutis. Unlike the vast majority of French desserts, clafoutis is extremely simple in its essence and unusually easy to make. This is a typical dish of country cuisine, something between a pie and a sweet casserole, it comes from the Limousin province. Initially, clafoutis, the French name of which comes from the word "to fill", was prepared only with cherries. This version is still considered classic, which, however, does not stop fans of this dessert from experimenting with other fruits and berries - from blueberries and plums to pears and apricots. Clafoutis with raspberries Ingredients: 0.5 kg fresh or defrosted raspberries, 5 tbsp sugar, 100 g flour, 4 eggs, 2 cups milk, 1 tbsp butter, salt. Method of preparation: Preheat the oven to 200 degrees. Pour 3 tbsp sugar over fresh or defrosted raspberries. In a deep bowl, mix flour, 2 tbsp sugar and a pinch of salt. Separately beat the eggs and add to the flour along with milk and melted butter. Stir until smooth, cover with a towel and leave at room temperature for 20-30 minutes. Drain excess juice from the raspberries and place the berries on the bottom of a greased baking dish. Pour the batter over them and place in the oven for 20 minutes. Reduce the oven temperature to 180 degrees and cook until golden brown – about another 20 minutes. Serve the clafoutis warm with a scoop of ice cream. No ice cream in the fridge? ! It will turn out just as good as the factory-made version, if, of course, you happen to have all the necessary ingredients…
