Beaujolais NouveauThe birth of Beaujolais is celebrated throughoutworld on the third Thursday of November. And in the birthplace of the famous drink, in the town of Beaujeu, the first bottle is opened at midnight - after the 12th stroke of the bell of the Church of St. Nicholas. This tradition began in 1951, when a decree of the French government allowed wineries in the Beaujolais region to sell young wine almost immediately after the harvest. Beaujolais Nouveau can be considered an exception to all the rules of French winemaking. Unlike the famous vintage wines of Bordeaux, Burgundy or Côtes du Rhône, it does not get better with age, and age does not affect its bouquet at all. It is made from the Gamay variety - with a very dark, almost black skin and delicate white juice. Gamay grows only in the Saone River valley in southern Burgundy, on sandy soils covering granite hills. It ripens much earlier than other varieties: the bunches are picked without pressing, carefully placed in fermentation tanks and kept for about four days. It is very important not to over-expose the grapes, otherwise the wine will become too tart and cloudy. If you rush, the taste of the drink will be weak. Therefore, it is poured into bottles on a strictly defined day and hour. Properly prepared wine acquires a light floral aroma, the taste of ripe fruit and a rich, bright ruby color. In addition to Beaujolais Nouveau, several other wines of this series are produced in the region, including the famous Beaujolais cru, the aging period of which reaches 20 years.This is the wine that is best servedchilled to 12-14°C, goes well with a variety of dishes. "Beaujolais Primeur", for example, "goes with meat and light snacks, "Beaujolais Jean Deville" (Beaujolais Jean Deville) - with roasts, game and poultry. "Beaujolais Villages. Charles Rousseau" (Beaujolais Villages. Charles Rousseau) is perhaps the only Beaujolais wine that can be offered not only with meat and fish dishes, but also with sharp cheeses. It is better to choose locally produced cheeses for other types. For example, goat's cheese cabrion, or mild, with a subtle aroma sechon, or Pierre Dore - a dry cylindrical cheese made from cow's and goat's milk. However, mozzarella, Saint-Marcellin or Camembert would also be appropriate. Thanks to its pronounced fruity tones, Beaujolais goes well with fruits, especially red ones. It can be drunk at any time of day, with or without a reason, but it is better to raise the first glass on its birthday.
