Gourmet: pancakes with cottage cheese and red fish
Photo: Peter NikitinThe foundations. Meat, fish, cabbage, cottage cheese - are there many options for the filling! However, it should be remembered: the filling is secondary, and in the first place is always His Majesty pancake. And for the main thing - the right dough. Ingredients (based on 18–20 pcs.):
- 3 eggs
- 400 ml sour milk
- 1 tsp coarse salt
- 3 tbsp. l. granulated sugar
- 4 tbsp. l. vegetable oil
- 2 cups of flour
- 50 g of butter
- 3 tbsp. l. vegetable oil
- 100 g butter for greasing baked pancakes
Cooking:Eggs beat up with sugar and salt, add a thin trickle of milk and beat again. Gradually add flour, stirring well. Add vegetable oil, stir, let stand for 30 minutes. Melt the butter, pour into the dough, stir. Pancakes bake as usual. I grease a frying pan with oil only before the first pancake, then as needed. Each baked pancake grease with melted butter. For the filling:
- 400 g of curd cheese
- 100 g sour cream
- 200 g of light-salted red fish (non-pure, suitable, pink salmon, for example)
- a handful of arugula or a bunch of dill
Cooking:Grind the greens, cut the fish into small cubes. Mix everything with curd cheese, add sour cream. For each pancake put a half Art. l. fillings, distribute, roll up rolls, chop diagonally rolls, garnish with arugula leaves. If there is red caviar, it is wonderful, you can put half a teaspoon on top of each piece.
