Kulich with raisins and nuts
Photo: Eksmo Publishing House Preparation time: 4–5 hours. Amount: 2 small cakes or 6 small ones. Ingredients: • 250 ml of milk • 1 5 g of fresh or 7 g of dry yeast • 550 g of flour • 60 g of butter • 40 g of sugar • 10 g of salt • 60 g hazelnuts • 60 g of raisins • 1 50 g of powdered sugar • 2 eggs + 1 protein Ready: 1. Crumble the yeast, mix with half the sugar and dilute 1/3 of the warm milk (not hot!). Put in a warm place for 10 min.2. Add eggs, second half of sugar, stir. Pour the flour, mix. Pour the remaining warm milk. Start kneading. Add salt and melted butter (not hot!). Knead the elastic dough. Transfer to a large bowl, cover with a clean towel, put in a warm place to approach. The dough should grow 2-3 times. Then knead it, cover, put back up.6. Soak the raisins, rinse them thoroughly, drain the water, roll in flour. Calcify the nuts in a dry skillet. The skin of nuts should crack well. Clean it off, chop the nuts with a knife. Roll out the dough on a board sprinkled with flour, spread nuts and raisins over it. Twist, split into two parts (or the number of forms), molded ball.9. Put the ball in the form for Easter cakes. Cover with a towel, leave for 40 min. Bake at a temperature of 180 ° C for 30–40 min.10. Mix the protein with powdered sugar (you can add a drop of lemon juice) and glaze the cooled cakes.
