Pumpkin is used in children's and dietary nutrition, for the prevention of gastritis and atherosclerosis, in the treatment of the liver and gall bladder. In addition, you can cook many delicious: it can be eaten raw, boiled, fried, steamed, baked, marinated and even dried for future use. You can make salads, side dishes, porridge, sauces, soups, pancakes, pies, chutney and even candied fruits from it. Pumpkin goes well with other vegetables - potatoes, carrots, tomatoes, eggplants, paprika, as well as with rice, millet, pasta. Its bright orange pulp will liven up any dish. As a side dish, pumpkin goes well with meat, poultry, fish and mushrooms.
Mushrooms
Hooray!It's time to enjoy the taste of autumn mushrooms (however, Muscovites are deprived of this pleasure this year: due to the smog that lasted in the capital for two summer months, it is not recommended to eat wild mushrooms grown in the capital region). Choose according to taste: porcini, birch boletes, aspen boletes, milk mushrooms, saffron milk caps, pig mushrooms... A porcini mushroom with a pronounced specific aroma will not go bad even alone, but will be able to open up. Ideal for a rich mushroom soup. For the winter, porcini mushrooms, like aspen mushrooms, are best dried. The rest - marinate or pickle. Milk mushrooms, black mushrooms, pig mushrooms are soaked, sometimes boiled, and then poured with strong brine. Honey mushrooms, birch boletes, and moss mushrooms are most often used for marinade. Only one mushroom is salted "dry" - saffron milk caps. They are simply wiped with a damp cloth, but not washed, but sprinkled with dry coarse salt and placed under pressure.
Nuts
The nuts are ripe, which means it's timestock up on them for the winter. It is best to buy hazelnuts, walnuts and pine nuts whole - they are stored longer in the shell. And you can use them in any dishes: add them to baked goods, in the Caucasian manner - to meat, fish and vegetable dishes, put crushed and, if desired, fried kernels in salads and ice cream. It is not for nothing that nuts are called the food of the future: they are extremely nutritious. Just 100 g of nuts is enough to satisfy the body's daily need for proteins. Nuts help our body cope with stress, restore shine to hair and smoothness to skin. However, those who want to lose weight should not rely on them. An excellent vitamin remedy during the cold period are nuts mixed with honey.
