2 ways to prepare pancakes
Recipes for pancakes are varied, but inmostly as one of the main components of the test in some products is milk, and in the second - kefir. On milk, pancakes are made thinner, they are easy to wrap stuffing. On kefir they are thick and more hearty. To test thin pancakes you need 1 liter of milk, 2 eggs, 3 tbsp. tablespoons vegetable oil, 2 tbsp. spoons of sugar, 1.5-2 cups of flour, ¼ tsp of soda and ½ tsp of salt. According to the recipe, milk should be heated to a temperature of 30 degrees before preparing the dough. In a deep bowl, beat the eggs together with sugar and salt, add a glass of warm milk, vegetable oil and soda to them, again mix thoroughly. Through a sieve sift the flour and pour into the mass, add the remaining milk, mixing everything to the consistency of sparse sour cream. For 20 min. Leave the dough at room temperature, then stir again and bake the mugs in a well-heated frying pan. For the preparation of pancakes on kefir you will need a glass of yogurt, water, boiling water, 450 gr. flour, 3 eggs, 40-50 gr. sugar, ¼ tsp of soda and ½ tsp of salt and 3 tbsp. spoons of the plant. oil. According to the recipe, yogurt is beaten with salt, sugar and eggs in a blender, a glass of water, flour is added to the mass, again everything is shaken up. In a glass of boiling water pour soda and quickly add them to the dough with vegetable oil. Stirred to uniformity, a rather liquid mass is infused for 10-15 minutes, then you can start baking products.
How can you wrap the filling in pancakes?
The main rule of the filling is its locationinside the product, that is, it should not flow out or fall out of the prepared dish. To fill the filling in a pancake until the moment of eating, it is wrapped in it in several ways.
The simplest form of the product is a closed tube. First, on top of the circle lay minced meat, stepping slightly from the edge, the sides of the product slightly tucked to the center, close the filling with the top edge of the pancake and roll it into the tube. The envelope is folded in a similar way, only the edges of the product are bent wider and the padding is not rolled, but is folded. You can put more filler in the envelope than in the tube. For a double triangle, the stuffing is placed in the center of the mug and the 3 edges of the product (top and 2 side) are tucked to the center, closing the filling to form a triangle. The lower corner of it is bent upwards, so in the center one more small triangle is formed, which is covered from above by lateral corners. Now the filling is securely hidden inside. For a festive table stuffed products can be shaped like a bag, tied the edges with feathers of green onions.
Variants of sweet fillers
Cottage cheese filling. One of the most common fillings is cottage cheese, it is not only tasty, but also useful, because it is a source of calcium. For the preparation of curds, 2 packs of cottage cheese (500 gr.), 50 gr. sugar, 1 glass of raisins, 1 teaspoon of lemon juice and vanillin. Raisins should be previously steamed in hot water for about half an hour, so that it swells. Cottage cheese should be beaten with sugar, vanillin and lemon juice, add the pressed up swollen raisins and knead well. Cool the mass in the refrigerator. Then put on the pancake baked on kefir (according to the recipe above), roll it up with an envelope or a tube and fry it in butter on both sides. For a recipe for pancakes stuffed with chocolate and banana cream, you need 3 bananas, 3 eggs, 2 glasses of milk, 3 tablespoons. tablespoons of cocoa, 2 tbsp. spoons of sugar. Bananas should be cleaned and softened to a consistency of puree. Stir cocoa and a half of sugar. In a saucepan, preheat the milk and dissolve the sugar from the cocoa in it. Eggs beat with the remaining sugar, add to them milk and bananas. Put a saucepan with cream on a water bath and cook until thick, constantly stirring. They are usually filled with cold, cooled pellicles and, without frying them, they serve to a table with hot tea. Pancakes with baking. In this recipe, the filling is baked with pancakes together. First, the dough is cooked with milk. 4-5 pieces of apples are peeled and peeled and cut into slices or thin circles. Then they are laid out on a preheated and oiled frying pan and poured into the batter. When it is browned on one side, it is turned over to the other and baked until ready. You can cook in a different way. Immediately pour a little dough into the pan, then quickly put apples and pour them on top with another layer of dough. Such products will turn out plump, but not less tasty and at once with a stuffing! Hot mugs are folded in any way and sprinkled with powdered sugar.
Unsweetened stuffing for pancakes
Pancakes stuffed with mushroom filling. Bake thin slices of dough on milk. The filling will be 400 g. champignons, 1 onion, 3-4 feathers of green onions, 2 tbsp. spoons of sour cream, salt, pepper to taste. Mushrooms and onions washed and cut into strips, sprinkled onions in vegetable oil to the color of gold, add mushrooms, fry for 10 minutes, add salt and spices. Cut chopped onion and sour cream to the mass in a frying pan and put out for 4-5 minutes. Minced "hide" in pancakes and serve them to the table warm. For reception of visitors it is possible to give to products the form of small bags, "having connected" them with green feathers of an onion. Pancake rolls with salmon and cheese. Thin pancakes are ideal for this unusual product. For the filling you need 150 gr. slightly salted salmon, 200 gr. cream cheese, 5-6 sprigs of dill and 3 pickled cucumbers. Stir the cream cheese with chopped dill. Cucumbers cut into cubes, salmon into slices. Cool the surface of the pellicle grease with cheese mass, lay a few slices of salmon and on top of them are cucumber slices. Pancakes roll with a tube and cut into rolls 4 cm thick. Instead of salmon you can use caviar, covering it with cheese mass. Stitched noodles stuffed with chicken liver are a simple and satisfying product.
