Preparation: Take a container in which to mix sage, butter, bay leaf, zest, black ground pepper and 1.5 teaspoon of salt. With this mixture, grate a piece of meat and leave it in the refrigerator for 10 hours so that it can soak up the aroma. Taking the meat, leave it for another 2 hours at room temperature, shifting the fat face upwards. To make the meat tasty and juicy, when baking it is necessary to comply with the temperature regime. Initially, preheat the oven to 230 degrees and put it into shape with meat for 30 minutes, then lower the temperature to 175 degrees, at which to bake the meat for 1.5 hours. You can check the readiness of beef in the oven in two ways: by the thermometer - inside the meat the temperature should be about 50 degrees, and in color it should be pink. If the necessary degree of roasting is achieved, turn off the oven and leave the meat there for another 20 minutes. Then release it from the bones and cut into medium pieces. Boil the potatoes to half-cooked, cut them large and, 15 minutes before the meat is ready, put it in a mold to beef, sprinkling with olive oil.
