Fried Pork In Sauce

You will need:- 450 g of lean pork pulp; - 175 ml of dry white wine; - 150 ml of heavy cream; - 2 tablespoons of mustard; - 15 g of butter; - 1 tablespoon of vegetable oil; - salt; - freshly ground black pepper. Rinse, pat dry with a paper towel. If the piece turns out to be greasy, cut off the excess fat. Cut the meat into cubes about 1 inch (2.5 cm) side. Heat the butter and oil in a deep skillet. When it starts to smoke, add the meat to the skillet. Fry it until golden brown on all sides. Do not stir the pork too much - it takes at least a minute for the meat to brown on one side. During this time, the proteins will "seal" the juice inside under the influence of high temperatures. Reduce the heat and continue to fry the pork until tender - this will take about 10 minutes. Place the meat on a platter and place in a warm place to prepare the sauce. Pour dry white wine into the frying pan where the meat was fried. Turn up the heat. Use a wooden spatula to scrape off any remaining meat and fat from the bottom and sides of the pan. Boil the wine until it is almost completely evaporated, then pour the cream into the pan, add the mustard, salt and freshly ground black pepper. Bring the mixture to a boil. Pour the hot sauce over the fried pork and serve with fresh white bread and green salad.

Fried pork with vegetables

Delicate taste of pork perfectly harmonizes with spicyand sweet peppers, as well as sourish tomatoes. Prepare a delicious mixture and serve it with pasta or freshly cooked rice. You will need: - 400 g of pork; - 1 red chili; - 2 red sweet peppers; - 1 red apple; - 4 medium-sized tomatoes; - 2 tablespoons of red jam currants; - 2 tablespoons of olive oil; - salt. For frying, choose moderately fatty meat - for example, rinse the pork ham, dry and cut into strips. Peppers clean by removing seeds and partitions. Cut them into strips. Scald tomatoes with boiling water and peel. Cut the fruit into 4 pieces. Apple peel and chop into slices. In a pan, heat the olive oil, put the pepper and fry for about 2 minutes. Then add the pork to the pan and cook it all together for another 4 minutes. Add tomatoes, apples, berry jam, stir and fry for 1-2 minutes. Arrange the ready pork with vegetables on the heated plates, add a side dish and serve.
