Buckwheat soup with chicken meatballs is quick, filling and delicious at the same time. This recipe is for 4 servings. It is based on 1 liter of chicken broth. Cut 2 potatoes and 1 carrot into small cubes, mince 200 g of chicken breasts, and beat 1 onion, 3 cloves of garlic and 1 egg in a blender. Bring the broth to a boil, add 4 tablespoons of washed buckwheat. Then add the potatoes and carrots. Season with salt and add bay leaves. Pour the chicken with the blender mixture, salt and mix well. Take the resulting minced meat with a teaspoon and dip in the broth. The soup is cooked until the potatoes are ready, garnished with parsley or dill before serving. If you have a lot of time and want to please your family with soup, prepare a pickle. Many people do not like barley, it does not matter - it can be replaced with rice. By the way, brown rice is considered the most useful. We need 500-700 g of chicken or meat on the bone, 2 onions, 3-4 pickles, 3 potatoes, 3 tablespoons of tomato paste, 100 g of rice, black pepper and bay leaf. Rinse the meat. and place in a large saucepan filled with water with a volume of at least 3 liters. After the meat has boiled, remove the foam, put one onion, 5 black peppercorns and a bay leaf. Cook over low heat until the meat is tender (from half an hour to an hour). When the meat is tender, remove from the broth and chop. Pickled cucumbers are cut into strips and fried in a pan with finely chopped onions in vegetable oil. At the very end, add tomato paste, then catch the onion from the pan and add the rice. A couple of minutes later, medium-sized chopped potatoes and a cucumber-onion mixture are laid. Boil until the potatoes are ready, add already cooked meat, salt to taste. Served with cilantro and sour cream. The soup is thick, nourishing and aromatic. Cooking will take a little over two hours. Following the above recipe, you will have 8 servings of a great first course, complementing which you can feed your family or guests to their fill.
