The picturesque Faroe Islands are located betweenScotland and Denmark. The local culture absorbed the best traditions of the North and redefined them to your liking. As a result, a unique kitchen was born, with which the chefs introduced the capital. The idea to bring local products to Moscow and to organize a dinner in the Metropol belongs to the journalist Gennady Iozefavichus and the owner of the Solea agency Elze Maria Holm Olsen. The choice of SAVVA restaurant is justified: the menu of the restaurant presents both traditional dishes and samples of “new Russian cuisine”, which combine a commitment to Russian dishes with a love for trendy Nordic Cuisine.
The result of the work of the tandem of Andrew and Life onKitchen SAVVA has become a tasting menu of eight changes. The guests of the evening were welcomed with crispy cod, bakalao (cod and potato cream) and deep-sea red crab. Herring marinated in beer and Faroese schnapps Havið were offered as a snack. Wine Pinot Grigio, Venezia Giulia I.G.T. Jermann subtly emphasized the taste of royal scallops and sea truffles. There were two main dishes - salmon from Hiddenfjord with “Borsch” sauce and the most tender lamb with celery. For dessert - melted butter cake with juniper beer ice cream.
Among the guests who appreciated the Faroesecuisine, there were Alexey Zimin, Vasily Shomov, Elena Chekalova and Leonid Parfenov, Tatyana Tolstaya, and Mikhail Shats, Boris Akimov, Alexander Rappoport, Andrey Zakharov, Albert Galeev, Nelly Konstantinova, Alexander Averin. On behalf of the people of the Faroe Islands, the guests were greeted by the official representative of the government of the islands in Russia, Dr. Bjorn Kunoy.
