Homemade preparations for the winter recipesThe secret of anyjams: ripe, not overripe fruits and berries without dents and spoiled sides, and the correct proportion of sugar. For each kilogram of fruit, take at least 1 kg of sugar. This ratio allows you to get a sufficient amount of syrup in which the berries and pieces of fruit will retain their shape. In addition, such preparations will be stored well. Any berries and fruits, as well as vegetables (for example, zucchini, physalis, cucumbers) are used for jam. First, syrup is boiled from water and sugar in an aluminum pan (or copper basin), then the berries are immersed in it. When the jam boils, remove the foam and shake the berries periodically. The fact that the jam is ready will be indicated by a cooled drop of syrup poured onto a saucer: it will not spread. By the way, jam can also be made with honey, which is taken in the same proportion as sugar.
