The peels and heads are by no means thrown away - they set the taste tone. After slightly draining on a napkin, they are thrown into boiling vegetable oil and fried until the husk becomes bright pink and crispy. This will take five to six minutes. Only then is drinking water added - so that it only covers the contents. When the liquid boils, the heat should be reduced. After cooking for 10 minutes, filter the broth and pour it into a samovar heated with coals or into another container. Now, before serving, dissolve the cooked spice paste in the newly boiled broth, add peeled shrimp, pour in lemon juice, fish sauce and sprinkle with lemon leaves.
